So here is my recipe for March. I actually found this recipe while looking for a February recipe and really liked this one too, it is simple, fast and my kids like it!!!
Cream Sauce With Sausage and Peas
Created by Cindy Szerlip who submitted it to Cook's Country
1 pound hot or mild Italian sausage, casings removed and meat crumbled
1 T. olive oil
1/2 med onion, chopped fine
1 garlic clove, minced
1/2 t. red pepper flakes
1/3 cup white wine (I just skipped this step)
3/4 cup low-sodium chicken broth
1 cup plus 2 T. heavy cream
2 cups fresh or frozen peas
1/2 cup finely grated Parmesan cheese
Salt and pepper
1 lb pasta of choice-I used bow tie, cooked according to directions
1. Brown sausage in large skillet, over medium heat, 6 to 8 minutes. Using slotted spoon, transfer sausage to plate lined with paper towels. Pour off grease in pan. Add oil and leave over medium heat until shimmering.
2. Add onion and cook until softened, 3 to 5 minutes. Add garlic and pepper flakes and cook until fragrant, about 30 seconds. Add wine and simmer until almost evaporated, 1 to 3 minutes. Add broth, and 1 cup cream; simmer until sauce reaches consistency of light cream, 6 to 9 minutes. Stir in peas and sausage and cook until flavors meld, about 2 mins. (maybe a min longer if peas frozen) Remove from heat, stir in cheese, and season with salt and pepper.
3. Toss sauce and remaining 2 tablespoons cream with cooked pasta and serve.

ReplyDeleteThat sounds and looks good even with the peas. I am not a fan of peas, but cooked in other things they are OK. My hubs loves them though so this would be a great recipe for us to try. Thanks for sharing.

ReplyDeleteThat looks really good! I love peas. I put thawed, frozen peas into my salads. My two year old eats them still frozen. Her weirdness must be genetic.
