One Dirty Bowl: Lemon Bread With Blueberry Streusel

With our new after school routine, I have been making a lot more treats, which of course means more dishes, which I hate, just ask my husband.  So when Christina Dymock asked if I would review her new cookbook One Dirty Bowl: Fast Desserts, Faster Cleanup, I was happy to oblige.

The recipe was quick and easy and we did just use one bowl (and the loaf pan to cook it in).

We ate it as part of our breakfast for dinner that night and it was a big hit, light and fluffy and the blueberries in it tasted so good.
Dessert

All of the recipes in the book look so quick and easy, and if they taste anything like the streusel I know they will be good.

I love that the recipes are in large easy to to read font with just one recipe to a page.  The colors and pictures in the book make me just want to try everything.

Christina says the idea for this book came slowly, as she was always looking for recipes that come together quickly and make a big impression.  As a busy mother of four she wanted to find recipes that would bring the refreshing taste of home cooking without making a huge mess in her kitchen.

I am definitely a fan of the book and will be using it on a regular basis.

Lemon Bread with Blueberry Streusel
One Dirty Bowl

Ingredients:
 1/2 cup sugar
 1/4 cup butter
 2 eggs
 1/2 cup milk
 1 cup flour
 1 tsp. vanilla
 1 tsp. lemon flavoring
 1 Tbsp. freshly grated lemon rind
 1 tsp. baking powder
 1/4 tsp. salt

For streusel:
 1/2 Tbsp. butter, room temperature
 1/4 cup quick oats
 2 Tbsp. sugar
 1 Tbsp. brown sugar
 1 Tbsp. flour
 1/2 cup blueberries

Preheat oven to 350 degrees.  Spray a medium loaf pan with nonstick cooking spray and set aside.

In a medium mixing bowl, beat together the sugar, butter, and eggs until smooth.  Add the milk, flour, vanilla, lemon-flavoring, lemon rind, baking powder and salt.  Mix well.  Pour the batter into the prepared loaf pan.  Use a rubber spatula to scrape out the bowl.

Once the bowl is scraped out, add all the streusel ingredients except the blueberries to the bowl.  Beat until well combined.  Stir in the blueberries.  Sprinkle the mixture over the batter in the loaf pan, but do not stir it in.  Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
