Quick and Easy Quiche Recipe

When I was first married, we didn't have a ton of money, so one year for Christmas I made a little cookbook for all of our family.  It had my favorite recipes that I liked to make, complete with "reviews" from my husband.  One of the recipes was an Easy Quiche Recipe that I still make today.

I love that it is a simple recipe that could be easily modified (with meat or veggies your family likes) and that is inexpensive and pretty simple to make.

Ingredients:

Crust:
  1/2 Cup butter or margarine
  3/4 t. salt (use 1 t. if using unsalted butter)
  1 Cup flour
  3-4 T. Cold water

Filling:
   1 cup broccoli (or which ever vegetable you prefer) finely chopped
   8 eggs
   1 t. thyme
   1 t. rosemary
   1 t. basil
   1 t. black pepper
   1 t. Dijon mustard
   1 cup mozzarella cheese grated
   2 cups cooked chopped meat (ham, bacon, sausage, turkey)**

Directions:
1) Preheat the oven to 350.
2) Mix the butter in mixer, then slowly add in flower and salt.  Add in water, 1 Tablespoon at a time, while mixing, until the right doughy consistency.
3) Press the dough into a pie pan, poke the bottom with a fork.  Bake the crust for 10 minutes.
4) While the crust is cooking, mix the filling ingredients in a large bowl.  Pour these ingredients into the bake pie crust.
5) Bake for 30-40 minutes at 350.  To ensure the quiche is done, poke a toothpick into the center to see if it comes out clean and the center is no longer liquid.

    1. You should, it really is easy and so good, plus you can change if you want and put in meats and veggies that your family likes
